“Norwegian Pancakes” Crepes

Ingredients

  • 3 eggs
  • 1 cup flour
  • 1 cup milk
  • optional: 2 tbsp melted butter
  • toppings: strawberries, whipped cream, butter, sugar

Directions

Preheat griddle to high heat. Stir all ingredients except toppings in large mixing bowl until batter is smooth. Spray griddle with non-stick spray. Pour batter onto griddle and spread thinly with a spoon. After some time, flip the pancake and let it cook on the other side. Repeat till no more batter. Top with strawberries, whipped cream, or just butter and sugar.
